After a long day of baking, Griff and I have a ritual of enjoying a cup of tea and a cookie or two in the late afternoon. This cookie always makes it to my plate. It’s tender and buttery and slightly crisp on the edges, with just the right amount of sweetness from the jam in the center. You can customize it with your favorite fillings if you like.
