Serve this bean spread, which has the consistency of hummus, as a dip or a spread to accompany a vegetable tray with crackers, or use as a spread on a vegetarian sandwich filled with crunchy vegetables.


  • 4 cups cooked butter beans
  • ½ cup fresh lemon juice

Combine the butter beans, lemon juice, cumin, pepper, garlic, and olive oil in the bowl of a food processor and process until smooth and creamy, about 1 minute.

The spread can be stored in an airtight container in the refrigerator for up to 1 week.
