An easy way to add extra flavor to sandwiches or create simple sauces for grilled meats and seafoods is to add a few extra ingredients to prepared mayonnaise. I love the combination of smoky chipotle and tangy lime in this version. It’s delicious slathered on a BLT or drizzled over Chipotle Bacon Tacos with Toasted Cumin Slaw.
In a small bowl, whisk together the mayonnaise, chipotles, and lime juice. Cover and refrigerate for at least 30 minutes, or up to 24 hours to allow the flavors to meld. The mayonnaise will keep, tightly covered in the refrigerator, for up to 2 weeks.
