I use this glaze for all of my BBQ. It gives it that nice tacky, sticky-sweet coating that all good BBQ should have. There is a lot of sugar in this recipe—and it will burn—so don’t apply the glaze until the last ten minutes of cooking.

Ingredients

  • 1 pound (455 g) light brown sugar

Method

In a medium saucepan over high heat, combine the sugar and vinegar and bring to a boil. Whisk until the sugar has melted and the mixture thickens slightly, about 5 minutes.

Transfer to a container with a tight-fitting lid. The glaze will keep, tightly covered in the refrigerator, for up to 1 week.
