Sour cream adds richness and creaminess while also balancing the heat of the chipotle and cayenne in this sauce. I love it on chicken (obviously), but also on pork or fried seafood dishes as well.
In a medium bowl, whisk together the sour cream, mayonnaise, lime zest, lime juice, chipotle, cumin, cayenne, salt, and cilantro. Cover and refrigerate for at least 1 hour to allow the flavors to meld. The sauce will keep, tightly covered in the refrigerator, for up to 3 days.
