It’s only natural that what is typically referred to as “the bacon of the spice world”—chipotle (which is a smoked and dried jalapeño)—would pair nicely with the smokiness of bacon. I use the two together a lot, and for good reason . . . it is a delicious combination. Use this rub to make your own Chipotle Bacon or sprinkle on store-bought bacon before cooking. You should also try it on pork, beef, or chicken.
In a small bowl, stir together all the ingredients until combined. Transfer to a container with a tight-fitting lid and store in a cool, dark place for up to 6 months.
