This is my version of the Dark and Stormy, but with a bit of smoke courtesy of bacon, of course. If you don’t have bacon-infused rum on hand, no worries, just use regular dark rum. My preference is Gosling’s.


  • 2 ounces (60 ml) bacon-infused dark rum
  • 1 ounce ginger liqueur, such as Canton
  • 1 ounce Simple Syrup
  • ½ ounce fresh lime juice
  • Ice cubes
  • 4 ounces (120 ml) cold ginger beer
  • Candied ginger Crisp cooked bacon strips
  • Orange slice


Combine the rum, ginger liqueur, syrup, lime juice, and 2 ice cubes in a shaker and shake for 10 seconds. Strain into a Mason jar filled with ice and top up with the ginger beer. Garnish with the candied ginger, bacon, and orange slice.
