Trying to improve on the classic BLT is not easy. I mean, why mess with perfection? And when you’re creating it for your wife, you really better be on your game. Adding one of her favorite things on earth, avocado, with its creamy goodness (a healthier alternative to mayonnaise), was the first step ... Adding a fried egg was the second, because everything tastes good with a fried egg. She loves it, so I succeeded.

Ingredients

  • 3 tablespoons unsalted butter or vegetable oil
  • 4 large eggs
  • Kosher salt and freshly ground black pepper
  • 8 slices ciabatta bread, ¼ inch (6 mm) thick, lightly toasted
  • 1 large ripe avocado, peeled, pitted, and cut into 8 slices
  • Thinly sliced ripe beefsteak tomato
  • 12 slices bacon, cooked to chewy perfection

Method

In a large sauté pan, heat the butter over medium heat until it just begins to sizzle. Carefully crack the eggs into the pan and season with salt and pepper. Cook until the white is set and the yolk is still runny, about 2 minutes.

While the eggs are cooking, put 4 slices of the bread on a flat surface. Top each slice with 2 slices of avocado, a slice of tomato, and 3 slices of the bacon. Place an egg on top of each and top with the remaining 4 slices of bread. Eat immediately!
