Our variation of this street food classic has, of course, thick-cut tender Bacon Confit that has been breaded and fried (and it’s somewhat healthy thanks to the pickled vegetables and herbs). This recipe calls for Nuoc Cham, a salty tangy sauce, but for those who prefer a sweet sauce, you can substitute Nuoc Mam Cham. You can’t go wrong either way.

Ingredients

For the Pickled Vegetable Salad

  • 1 small carrot, peeled and coarsely grated
  • ½ English cucumber, thinly sliced
  • 8 fresh basil leaves, torn
  • 8 fresh mint leaves, torn
  • ¼ cup (10 g) lightly packed fresh cilantro leaves
  • ¼ cup (60 ml) Nuoc Cham or Nuoc Mam Cham

For the Sandwiches

Method

Make the pickled vegetable salad: In a medium bowl, combine the carrot, cucumber, basil, mint, and cilantro. Add the nuoc cham and mix well. Let sit at room temperature while you prepare the sandwiches.

Make the sandwiches: Put the bread on a flat surface and spread each slice with 1 tablespoon of the mayonnaise. Put 3 slices each of the bacon on 4 slices of the bread. Top the bacon with a large spoonful of the pickled vegetable salad, then top with the remaining slices of bread.
