I remember the first time I made Kentucky fried bacon. I liken it to when man discovered fire. I thought I was a culinary genius. Tender pieces of bacon cooked slowly in its own fat, then breaded with light-as-air bread crumbs and fried to golden brown perfection. Here, I serve it encased in warm tortillas and topped with a variety of toppings.


  • 4 (6-inch/15-cm) flour or corn tortillas
  • 4 pieces Kentucky Fried Bacon, warm
  • Toppings (suggestions follow)


    Preheat the oven to 300°F (150°C). Wrap the tortillas in aluminum foil and warm in the oven for 15 minutes.

    Lay the tortillas on a flat surface. Place 1 piece of the bacon in the center of each and top with a few tablespoons of toppings.

    Here are a few of my favorites combinations:

    1. Grilled Corn Succotash and Habanero Sauce
    2. Buffalo sauce, Bacon–Blue Cheese Ranch, and Pickled Jalapeño Salad
    3. Piperade and Avocado Salsa Verde
