The addition of oats to a basic pancake recipe is an easy way to add protein and fiber and start your day off on the right note. The addition of bourbon to the batter? That makes you look forward to the day. For a double infusion of oats and additional texture, I love adding a few handfuls of Bacon Granola to the mix on occasion, too. Being healthy never felt so easy.


  • cups (155 g) all-purpose flour
  • cup (30 g) rolled oats (not quick cooking)
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 teaspoon ground cinnamon
  • 2 large eggs
  • ¼ cup (60 ml) plus 1 tablespoon bourbon bacon fat, melted and slightly cooled; or ¼ cup (60 ml) rendered bacon fat plus 1 tablespoon bourbon
  • ¼ cup (55 g) plus 1 tablespoon light brown sugar
  • 2 tablespoons clover honey
  • 1 cup (240 ml) cold shaken buttermilk
  • Butter, plus more for serving, or nonstick cooking spray
  • Maple syrup


In a large bowl, whisk together the flour, oats, baking powder, baking soda, salt, and cinnamon.

In a medium bowl, whisk together the eggs, bacon fat, brown sugar, honey, and buttermilk. Add the wet ingredients to the dry ingredients and mix until just combined (lumps are okay). Cover and let the batter sit for 30 minutes.

Preheat the oven to 200°F (93°C). Heat a griddle or cast-iron pan over medium heat and brush with butter or spray with nonstick spray. Working in batches, pour the batter onto the griddle by ¼-cup (60-ml) measures and cook the pancakes until golden brown on both sides, about 2 minutes per side. Repeat with the remaining batter, brushing the griddle with more butter or spraying with more nonstick spray as needed. Transfer the pancakes as they are cooked to a heatproof platter and keep them warm in the oven.

Serve with butter and maple syrup.


To make Bourbon Granola Pancakes: Sprinkle a healthy amount of Bacon Granola on each pancake before flipping them on the griddle.
