The addition of oats to a basic pancake recipe is an easy way to add protein and fiber and start your day off on the right note. The addition of bourbon to the batter? That makes you look forward to the day. For a double infusion of oats and additional texture, I love adding a few handfuls of Bacon Granola to the mix on occasion, too. Being healthy never felt so easy.
In a large bowl, whisk together the flour, oats, baking powder, baking soda, salt, and cinnamon.
In a medium bowl, whisk together the eggs, bacon fat, brown sugar, honey, and buttermilk. Add the wet ingredients to the dry ingredients and mix until just combined (lumps are okay). Cover and let the batter sit for 30 minutes.
Serve with butter and maple syrup.
To make Bourbon Granola Pancakes: Sprinkle a healthy amount of Bacon Granola on each pancake before flipping them on the griddle.
