Ingredients: 1 cup (170 g) good-quality semisweet chocolate, coarsely chopped, or semisweet chocolate chips; 2 teaspoons pure vanilla extract; 1 large egg yolk; 1 cup (220 g) brown sugar; 1 large whole egg; Confectioners’ sugar; ¾ cup (170 g) unsalted butter, at room temperature; ½ cup (100 g) granulated sugar; ½ teaspoon baking soda; 2¼ cups (280 g) all-purpose flour; ⅛ teaspoon fine sea salt; 12 slices Bourbon Candied Bacon, coarsely chopped

Some people prefer nuts in their chocolate chip cookies. I prefer candied bacon. This was the very first dessert I came up with when I opened BarBacon. These cookies remain on the menu to this day and continue to be extremely popular. In the summer, we serve them sandwiched with bacon ice cream.
