These muffins are a favourite on our breakfast menu. They can be made quickly in the morning and are absolutely delicious served warm with a dollop of Greek yoghurt and some berries or Berry Compote on the side. If you’re not gluten free, you can make them with standard granola, flour and baking powder — just leave out the xanthan gum.
