Blueberry, Lime & Coconut Loaf

Name: Blueberry, Lime & Coconut Loaf
Yield: Serves 8
Ingredients: 120 g unsalted butter, melted and cooled slightly; 3 medium eggs; 1 tbsp toasted coconut flakes or desiccated coconut; handful of fresh blueberries; 130 g tinned coconut milk; 200 g blueberries tossed in a spoon of flour; 2 tsp vanilla extract; 120 g full-fat natural or Greek yoghurt; 160 g caster sugar; 240 g self-raising flour; 2 lb (23 x 13 x 7 cm) loaf tin, greased and lined; 2 tbsp Lime Curd; zest of 2 limes; 50 g desiccated coconut

This is a lovely, summery loaf that looks very impressive but is deceptively easy. All it is is a bit of mixing! No creaming butter and sugar, just wet ingredients into dry. The loaf looks particularly pretty if, while it’s still warm, you drizzle the top with lime curd and sprinkle over some curls of toasted coconut. We use the Lime Curd but you could use shop-bought or lime marmalade or a lime drizzle.
