This is a lovely, summery loaf that looks very impressive but is deceptively easy. All it is is a bit of mixing! No creaming butter and sugar, just wet ingredients into dry. The loaf looks particularly pretty if, while it’s still warm, you drizzle the top with lime curd and sprinkle over some curls of toasted coconut. We use the Lime Curd but you could use shop-bought or lime marmalade or a lime drizzle.
