Pink Grapefruit Meringue Shortbread Tarts

We love these light, citrusy, indulgent tarts. We fill them with a thick layer of home-made Grapefruit Curd, which has a beautiful soft peachy colour, but it works just as well with lime or lemon curd, home-made or shop-bought. The tart shells are incredibly easy to make: there’s no pastry or rolling out; it’s just a thick layer of shortbread dough pressed into individual pie tins.
