This is the buttercream we use to ice our Sticky Toffee Layer. Browning the butter first makes it taste sweet and nutty and much deeper in flavour. It’s the perfect buttercream for any autumnal cake: think sticky, dark, ginger, apple and date flavours. It takes a little time to make, but it’s worth the effort.
