Bialys are chewy, flat, disk-shaped rolls with indented centers filled with slow-roasted onions and poppy seeds. They were once readily available in American urban centers with Jewish communities, but now they’ve become difficult to find. By sharing our recipe, we hope to revive their popularity. They’re delicious on their own or with many of the same fixings and accompaniments you’d eat with a bagel. Enjoy!
