Though I would be happy to bake (and eat) a cherry pie once a week, the season for fresh sour cherries is so short that I’m lucky to get in one pie a year.

Sour cherries never appear in supermarkets, so they may be difficult to find. Begin checking farmers’ markets and roadside fruit stands in late June and early July, or try to locate a source for IQF (individually quick frozen) sour cherries. Unfortunately, sweet cherries and canned sour ones do not make a good pie.
