These are a great way to dress up humble cream puffs. The little puffs are filled with a white chocolate ganache similar to the center of a truffle. Then they are coated in melted white chocolate and rolled in white chocolate shavings—a real treat for lovers of white chocolate.

  1. Set a rack at the middle level of the oven and preheat to 400 degrees.
  2. Prepare the pâte à choux. Use a pastry bag fitted with a ½-inch plain tube (Ateco #806) to pipe about twenty-four 1-inch-diameter puffs on the prepared pan.
