Often a tart crust needs to be fully baked before adding a filling that doesn’t require baking. This technique is known as baking it ‘blind’. It’s simple to do, but you’ll need some dried beans to weigh down the crust during the initial baking time when it might puff up and distort.



  1. When you are ready to bake the tart crust, set a rack in the centre of the oven and preheat to 180°C/gas mark 4.
