Shaker Lemon Tart

This is my version of what’s often known as Shaker lemon pie. The Shakers were a Christian religious sect that practised communal living and have left behind a legacy of delicious plain cooking and beautifully designed hand-crafted furniture and household accessories. This four-ingredient lemon filling is a perfect example of Shaker cooking at its best. This is usually made with thin lemon slices.
