Though a chocolate cream tart is often covered with whipped cream, it’s more traditional to use a light meringue. For best results, don’t have the chocolate cream too cold or a layer of watery condensation will develop between the filling and the meringue.

  • 480 ml full fat milk
  • 110 g sugar

Method

  1. For the chocolate cream, combine the milk and sugar in a medium saucepan and whisk to dissolve the sugar. Add the cinnamon stick and orange zest. Set the pan over a low heat and bring to the boil.
  2. Meanwhile, pour the cream into a large heat-proof bowl and whisk in the cornflour. Whisk the eggs into the cream mixture, one at a time.
