Za’tar is a blend of herbs, white sesame seeds, and salt popular in Middle Eastern cooking. Many regional variations exist, and packaged blends are easy to find. Just be sure not to buy the finely ground variety, which, when combined with the oil, will form a paste unsuitable for topping.

Ingredients

  • 5 tablespoons za’tar
  • 4 tablespoons olive oil

Method

  1. Stir the za’tar and oil together and set aside.
  2. Divide the dough into four pieces, round and let rest as in Seeded Flatbreads, above.
  3. After preheating the oven, shape into four 15cm discs, place on the prepared tin, cover, and allow to puff.
  4. Dimple the formed loaves and spread each with a quarter of the topping. Bake, cool, serve, and
