Sage and sundried tomatoes make a flavourful focaccia topping but if you like, add them directly to the dough as in the variation below. See the end of the recipe for suggestions on other additions to the dough. Don’t be afraid to be creative. Other dry cheeses, cured meats, and fresh or dried herbs beyond the ones suggested are fine too, as long as you don’t overdo it.
