A quintessentially American cake layer, this deserves to be better known by a wider audience. More than easy to prepare, a good butter cake is the perfect foundation for fillings and frostings, whether light or rich. And butter cake layers can’t be beaten if you need to mix up a birthday cake in a hurry.


  • 300 g plain flour
  • 2 teaspoons baking powder
  • ¼ teaspoon


  1. Set a rack in the centre of the oven and preheat to 180°C/gas mark 4.
  2. Use a small whisk to stir together the flour, baking powder and salt; set aside.
  3. Thoroughly whisk the milk and egg whites together, then transfer to a 500ml jug (you won’t
