The rich chocolate flavour of these layers derives from unsweetened chocolate, which transforms what is basically a yellow cake batter into a chocolate one. To further enhance the flavour of the chocolate, add ¼ teaspoon cinnamon, 2 teaspoons instant coffee granules dissolved in the milk, or the grated zest of a lemon or orange.
Prepare the batter according to the master recipe for White Butter Cake, starting with step 1, using the ingredients above and skipping step 3. At the end of step 4, beat in the eggs one at a time, beating smooth after each addition, then beat in the melted chocolate. Finish mixing, bake, cool, and store as in the master recipe.
