Puréed pumpkin makes a wonderfully moist cake and I particularly love this version of pumpkin cake because it echoes the flavours of a pumpkin pie, near the top of my list of favourite desserts. It has become stylish to use fresh pumpkin for pies and cakes, but unless you use an orange-fleshed pie pumpkin, you’ll get a watery purée that’s low in pumpkin flavour.
