Yellow cake, whipped cream and strawberries make a simple yet elegant cake that always has everyone hoping that seconds will be offered. When I was a child, retail bakeries referred to this as ‘strawberry shortcake’, but real shortcake is made with rich baking powder scone dough that has sugar and eggs added to it. I make this a couple of times a year and only when really sweet local berries are in season or it just doesn’t have enough flavour.
