These are a Swiss and Alsatian classic. A sponge batter is piped out in flat disks, which are then covered with sugar and allowed to dry, making a sparkling crust on the outside of the cookies after they are baked.

  • 4 large eggs
  • 2 egg yolks
  • cups sugar

Method

  1. Half-fill a medium saucepan with water and bring it to a boil over medium heat.
