Method

  1. Combine the maple syrup, cream, sugar, and glucose syrup in a heavy-bottomed saucepan. Cook to 245°F/118°C, stirring constantly.
  2. Pour onto a marble surface and place the fondant, vanilla extract, and toasted walnuts on top of the cooked syrup.
