Light Almond Sponge Cake (Biscuit), or ladyfingers (one 2 ounce package) 24 fingers 2 ounces 56 grams

Method

Make the light sponge cake (biscuit), baking it in the two inch tart pans or 10 inch cake pans. The cake also can be baked in the half sheet pan as described in the recipe. (If using the sheet pan, you will cut one 9 inch round for the cheesecake base. From the remainder, cut a rectangle to use separately as a small cake roll or to line the sides of the cake, following the instructions given for the Marble White and Dark Chocolate Cheesecake.)
