For bolder, more pungent tasting cheesecakes that can be served as an appetizer, increase the Stilton cheese to 3 tablespoons/1.8 ounces/52 grams. Serve with wheat crackers.

For larger servings, the cheesecake batter can also be baked in six (6 to 8 ounce capacity) ramekins and filled with 3.5 ounces/100 grams per ramekin. Reduce the walnut halves to ½ cup/1.8 ounces/50 grams. Bake for 40 to 50 minutes.
