To make the cookies using shortening instead of butter, substitute an equal weight or volume of solid shortening (preferably Spectrum), melted and cooled for about 1 hour, or until no longer warm to the touch. (Melted, it will measure ⅔ cup/158 ml.) Decrease the flour to 2 cups/8.5 ounces/242 grams.
