Method

My friend Maria Menegus adds grated chocolate to her favorite chocolate chip cookies. The grated chocolate dissolves immediately on eating, contributing to a melt-in-the-mouth quality. Simply add 2 ounces/56 grams of grated milk, semisweet, or bittersweet chocolate together with the chocolate chips and walnuts.

Bake the cookies for 12 to 14 minutes. They will form cracks across their tops, but these will diminish slightly while cooling.
