Method

Roll each dough disc into an 8 inch square instead of a round, sprinkle with the filling, roll it jelly roll style, and slice into ½ inch thick slices. Brush the top of each slice lightly with the milk, sprinkle with the cinnamon sugar, and set, sugared side up, about inches apart on the prepared cookie sheet.

For the following two variations, eliminate the cinnamon and the brown sugar and use a total of 5 tablespoons/2.2 ounces/62 grams superfine sugar for the filling.
