This dressing is best when paired with pork or fish, but it’s simple enough to use on greens alone. The ancho is best used whole, but you can use ancho powder if whole dried chiles aren’t available in your neck of the woods. I’ve used this vinaigrette on double bone-in smoked pork chops with a simple arugula salad, which is a winner in our house when we want something a little lighter than traditional barbecue or Tex-Mex food.
