I grew up in a household where my mom made her own salsa roja until it became a side hustle. To this day, Teresa Hurtado’s “Salsa Queen” salsa has fed friends and family, and even made its way to the likes of George Strait. Her salsa is good on anything, but like any stubborn son, I had to do things my way and so I made a smoky variation—with a little more kick, too. I start with heirloom tomatoes because I believe a good salsa begins with quality ingredients. The heat level w
