Greek yogurt isn’t traditional when it comes to Tex-Mex cuisine, or barbecue for that matter, but not much of what I do is traditional. This crema is the perfect accompaniment for nachos, but can even be used on elotes with queso fresco.

Ingredients

  • 1 cup (240 g) plain Greek yogurt
  • ½ cup (120

Method

  1. In a food processor or blender, combine the yogurt, mayonnaise, water, garlic, lime juice and zest, and salt. Blend for 4 to 5 seconds, or until smooth.
  2. Add the cilantro and pulse 3 to 4 times until the crema is smooth and creamy.
  3. Serve immediately. Keep leftovers refrigerated, in an airtight container, for up to 4 days.
