Let’s address the elephant in the room for anyone wondering about the difference between esquites, elotes, and Mexican street corn. For one, both esquites and elotes are Mexican street corn, but esquites are served off the cob in a cup (or elote en vaso), and elotes are served on the cob with crema, queso fresco, cilantro, and chile powder. I’ve served all kinds, but I generally prefer esquites (off the cob) because it’s easier to eat.
