This is, hands down, some of the best Mexican rice you’ll ever eat. Much like Brisket Charro Beans, Mexican rice doesn’t have to be complicated. My grandma always used frozen peas and carrots so that’s the way I make it. For the chicken base, you can use powder, but I prefer the congealed, gelatin-like version. Be sure to strain the chipotle peppers before blending them.
