Texas Pork Ribs

Pork ribs are, perhaps, the one protein that gets me the most excited about Texas barbecue. Yes, even more than brisket. Pork ribs give you identity. They provide a canvas for creativity. I firmly believe that Dayne Weaver makes some of the best pork ribs in the state of Texas. When I first had Dayne’s ribs (from Dayne’s Craft Barbecue in Aledo, Texas), I knew that he had something special. Dayne’s ribs have the perfect “bite” and a slight sweetness with a beautiful reddish-mahogany color a
