Like pork ribs, beef ribs come in different sizes and cuts that can be used for different styles of cooking and various recipes. You can use beef back ribs, which have less meat and fat, but are full of flavor. There’s also chuck short ribs (the first to fifth ribs), most commonly used for braising or low and slow cooking methods. But in Texas we do everything bigger, so we use the plate short ribs (the sixth to tenth ribs), most commonly called “dino ribs.” These are typically sold in sets
