Pork shoulder is one of those meats that’s incredibly versatile and relatively inexpensive, but often overlooked or an afterthought on Texas barbecue menus. What I love most about this dish is how well it works with the heat from the spicy mustard. I prefer pulled pork in a warm tortilla, but you can also use it in salads, enchiladas, on a tostada, or even in flautas.
