This one’s for all the spice lovers who want to sweat and swear after a few bites of their barbecue. I first made this spicy half chicken while cooking out of our food trailer in 2019 because I didn’t have anything with real “heat” on the menu. It has transformed over the years to where we use my buddy Wes Wicker’s Big Wicks “Fuego” glaze on the chicken, which includes mesquite-smoked jalapeños and serrano chiles.
