Beef Rib Chili

Chili is one of those dishes that everyone makes, but not everyone makes it with a smoked beef rib that would typically cost $50 to $65 at a craft barbecue restaurant. When I operated out of a food trailer, I’d sometimes have trouble selling out of beef ribs and would be left with two or three racks that I couldn’t reheat to sell again. So, I figured, beef rib chili—why the hell not? It was an instant hit and I found myself selling more beef rib chili than I could smoke beef ribs to make. C
