Pastrami takes patience, especially when brining an entire brisket for six to seven days just to spend twelve hours tending a fire to smoke it. I don’t always have a week to prepare a menu item, which is why I use tri-tip for this dish. It takes way less time to brine, and cooks significantly faster, yielding a tastier taco in only a few days.
