This tri-tip taco combines the bold flavors of California grilled tri-tip with Central Texas–style smoke. This is one of those rare instances where it’s okay to use mesquite wood for smoking and grilling. I don’t like smoking with mesquite wood because it can be bitter, but I love grilling with mesquite wood at higher temperatures. I use a reverse sear method here to achieve the perfect sear and medium-rare temperature, making this a taco you won’t soon forget.
