Lengua (cow’s tongue) is an incredible dish in Mexican cuisine when done right. In fact, I grew up eating lengua from Danal’s restaurant in Irving, Texas, without ever knowing it came from a cow’s tongue. It’s rich and decadent, like barbacoa, but has almost a chopped brisket mouthfeel. I love this recipe because it takes one of my favorite things to eat as a kid and adds a layer of complexity to it by smoking the lengua after boiling it.
