The brisket biscuit is a Fort Worth breakfast icon. It started with my buddy Derek Allan, who operated Derek Allan’s Texas Barbecue for years before graciously allowing me to take over his spot in 2022. One of the things I promised to continue was serving breakfast to the local community, which is something I don’t do at my other locations. The brisket biscuit torch was then passed with a slight Tex-Mex variation—the addition of salsa.
