Biscochitos are, essentially, shortbread or butter cookies made with lots of sugar, butter, and love. They’re the official state cookie of New Mexico, but I grew up eating something similar in north Texas. You can find them at local grocery stores, but they’re easy to make and it’s even easier to eat an entire batch all by yourself.

Ingredients

  • 8 tablespoons (1 stick, or 112 g) unsalted butter, at room temperature

  1. In a large bowl, using an electric handheld mixer on medium speed, cream together the butter, shortening, and sugar for 2 to 3 minutes until light and fluffy.
  2. Add the egg, orange juice, and orange zest and mix well.
